To give my sister and her husband a real treat when they visited us last week from Florida, I asked Alan Mandic, who runs Secret Dalmatia, to set up a wine tasting tour for us.  He met us in Skradin and then took us to a little village 8 or 10 km up in the hills to the Bibic Winery, a boutique producer of some luscious whites and reds….as well as fine aged dessert wine.  What a treat! At the end of a one lane road was the winery and its restored farmhouse that serves as both a shop and a place to enjoy some truly spectacular delicacies, served up by owner Alen Bibic’s wife.  The photos don’t do the food justice.  We began with a subtle marinated fish and a bottle of Debit 2007, a smooth light white. This was followed by a gazpacho with strawberry foam served with a distinctively fruity rose amusingly called Think Pink, also a 2007. Then out came an astonishing rissoto with duck,  accompanied by a “serious” white Lucica Riserva, 2007.  We were all pretty speechless because there was more to come….gorgeous fillets of pheasant with a red.  And finally, a panna cotta with a 5 year old dessert wine called Prosek.  All of these scrumptious dishes were served on different plates, by the way, a wonderful elegant compliment to the simple surroundings and checkered tablecloth table.  My only regret is that there wasn’t time enough to do it all over again….but it was a memorable introduction to one of Croatia’s most respected wineries.  A lot of their production goes to the US.  So Bibic is not easy to find.  Their wine should be available at better shops, so keep on the lookout.  Combined with a day trip to Krka National Park, a visit to Bibic is a splendid way to end a magical day in the Skradin area!
